This homemade vanilla cake with blueberry filling is soft, flavorful, and made completely from scratch. Perfect for any occasion!

This cake is a family favorite. It's simple, yet elegant and it's always a crowd-pleaser. I especially love the combination of vanilla and blueberries, they pair so well together.

For this layer cake, I decided to use my homemade blueberry cake filling instead of blueberry jam because I love the flavor and the chunky texture. The vanilla buttercream is smooth, easy to work with, and not too sweet, which really lets the blueberry flavor shine.

This cake may look like something from a bakery, but it's actually not difficult to make from scratch.

  • Cornstarch: This helps to thicken the filling.
  • Water: Keeps it smooth and prevents the blueberries from burning while cooking.
  • Lemon juice: It really does brighten the flavor and it also adds a slight tang.

Vanilla Cakes

  • Flour: I always use all purpose flour.
  • Baking powder: It helps the cake rise.
  • Salt: As always, salt enhances the overall flavor.
  • Unsalted butter: Use room temperature butter so it creams well with the sugar.
  • Sugar: I use regular, granulated sugar.
  • Eggs: You'll need three medium eggs.
  • Pure vanilla extract: It adds that classic vanilla flavor.
  • Vegetable oil: I use sunflower or canola oil, but any neutral oil will work. It adds extra moisture.
  • Whole milk: It helps create a smooth, rich batter. You could also use reduced fat milk.

Less Sweet Vanilla Buttercream Frosting

  • Powdered sugar: It not only sweetens the frosting, but it also helps to thicken it.
  • Heavy cream: It makes the frosting smooth and creamy.

  • Parchment paper
  • Hand mixer or stand mixer fitted with a paddle attachment
  • Rubber spatula
  • Offset spatula
  • Piping bag and tip (optional, for swirls)

How to Make Vanilla Cake with Blueberry Filling

Step-by-step Instructions

First, make the blueberry filling.

Blueberries, cornstarch, sugar, water, and lemon juice in a saucepan.

1. Add blueberries, sugar, lemon juice, water, and cornstarch to a saucepan.

2. Cook over medium-low heat, stirring occasionally, until it starts to bubble and the berries soften.

3. Then continue to cook until the mixture thickens. You'll know it's ready when you drag a spatula across the bottom of the pan and the filling leaves a line that slowly comes back together.

4. After that, transfer it to a bowl, cool completely, then refrigerate for at least 1 hour. It will thicken a bit.

Top Tip

Chilling the blueberry filling helps thicken it and stay in place between the cake layers.

Then, make the vanilla cake layers.

1. Grease and flour two 8-inch pans, then line the bottoms with parchment paper.

2. In a medium bowl, sift the flour and baking powder. Then add the salt and set aside.

3. In a large bowl, beat the butter until creamy.

4. Add the sugar and beat until the mixture is light and fluffy.

5. Then add the eggs one at a time, beating well after each addition. After that, add the vanilla and oil and mix again.

6. Add the flour mixture and milk in alternating additions, mixing just until combined. Don't overmix.

7. Divide the batter evenly between the prepared pans.

8. Bake until the cakes are lightly golden and a toothpick inserted in the middle comes out clean.

Let the cakes cool completely before assembling.

Make the Vanilla Buttercream

1. First, beat the butter until it's very smooth and soft, about 2 minutes.

2. Then add the powdered sugar, vanilla, and cream and beat for about 8-10 minutes.

1. Place one cake layer on a serving plate or cake stand and evenly spread some buttercream over the top.

2. Then pipe a border around the edge with more buttercream to hold the filling in.

3. After that, spoon the chilled blueberry filling inside the border and gently spread it out to the edges.

4. Then place the second cake layer on top.

5. Apply a thin crumb coat and chill the cake for 30 minutes (or freeze for 10 minutes).

6. Frost the top and sides with the remaining buttercream. Decorate with swirls and fresh blueberries, if desired.

Recipe notes

Make-ahead options

  • Cake layers: Bake 1-2 days in advance. Let them cool, wrap tightly in plastic wrap, and refrigerate.
  • Filling: Can be made up to 2 days ahead. Store in an airtight container in the fridge.
  • Buttercream: Best made the day you plan to assemble the cake.

Storage Tips & Freezing Instructions

Refrigerator: Store leftover cake in an airtight container for up to 4 days. Bring to room temperature before serving.
Freezer:
Unfrosted cake layers can be frozen for up to 2 months. Wrap them in plastic wrap and foil.
Blueberry filling can be frozen separately. Thaw in the fridge before using.
I would avoid freezing the fully assembled cake, as the texture of the buttercream and filling may change.

Variations 

  • Add lemon zest to the cake batter or the buttercream for more citrus flavor.

  • Use a piping bag to create a border before adding the filling.
  • Chill the cake after applying the crumb coat.
  • For neater slices, refrigerate the cake for at least 30 minutes before cutting. This helps the filling and the buttercream firm up and hold their shape.

Can I use frozen blueberries in the filling?

Yes, you can. There's no need to thaw them first.

Can I make this cake ahead of time?

Yes. You can prepare the cake layers and blueberry filling a day in advance, then make the frosting and assemble the cake the next day.

What other frostings would work?

Lemon buttercream, whipped cream, or cream cheese frosting, like in my Blueberry Chocolate Cake would be great alternatives.

Ingredients

For the blueberry filling (This makes about 1 cup.) Get the full Blueberry Cake Filling post with extra tips and FAQs here.

  • 6 oz fresh or frozen blueberries (170g)
  • ⅓ cup granulated sugar (70g)
  • 1 tablespoon lemon juice (15ml)
  • 1 tablespoon cornstarch (8g)
  • 2½ tablespoons water (37.5ml)

For the vanilla cake layers

  • 2 ½ cups all purpose flour (312g)
  • 2 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup unsalted butter at room temperature (170g)
  • 1 ½ cups sugar (300g)
  • 3 medium eggs at room temperature
  • 2 teaspoons vanilla
  • 1 tablespoon light vegetable oil
  • 1 cup whole milk (250ml)

For the Vanilla Buttercream (makes about 3 cups)

  • 1½ cups unsalted butter softened to room temperature (340g) (should be very soft and indent easily when pressed with a finger or rubber spatula, but still hold its shape)
  • 3 cups powdered sugar (360g)
  • 1½ teaspoons vanilla extract
  • ½ cup heavy cream or heavy whipping cream at room temperature (125ml)

For Garnish (optional)

  • some fresh blueberries

Before You Start:

Instructions

Make the blueberry filling.

  • Combine all ingredients in a medium saucepan.
    6 oz fresh or frozen blueberries, ⅓ cup granulated sugar, 1 tablespoon lemon juice, 1 tablespoon cornstarch, 2½ tablespoons water
  • Cook over medium-low heat, stirring occasionally, until the mixture begins to bubble and the blueberries start to soften, about 3-5 minutes.
  • Reduce heat to low and simmer for another 5 minutes, stirring constantly, until the mixture thickens. Use a spatula to gently mash some of the blueberries as it cooks. You'll know it's ready when you can drag the spatula across the bottom of the saucepan and the filling briefly holds the separation before flowing back together.
  • Transfer the filling to a heatproof bowl and allow it to cool to room temperature.
  • Refrigerate for at least 1 hour before using.

Make the vanilla cake layers.

  • Preheat the oven to 350℉/180℃.
  • Grease and flour your cake pans, tapping out any excess flour. Line the bottoms with parchment paper and set aside.
  • In a medium bowl, sift together the flour and baking powder, then stir in the salt. Set aside.
    2 ½ cups all purpose flour, 2 ½ teaspoons baking powder, ¼ teaspoon salt
  • In a large mixing bowl, beat the butter until softened (about 1-2 minutes). Add all the sugar at once and continue beating for about 5 minutes, or until light and fluffy, scraping down the sides as needed.

  • Add the eggs one at a time, beating well after each addition.

  • Mix in the vanilla extract and oil until just combined.
    2 teaspoons vanilla, 1 tablespoon light vegetable oil
  • Gradually add the flour mixture and milk to the butter mixture, alternating between the two (starting and ending with the flour). Mix on low to medium speed just until incorporated-avoid overmixing.

  • Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until the tops are lightly golden and a toothpick inserted in the center comes out clean.
  • Cool the cakes in the pans for 10 minutes. Then, turn them out onto a wire rack upside down to cool completely.
  • Optional: If you prefer to level the cakes, wait until they're completely cool. For easier trimming, wrap them in plastic wrap and chill in the fridge for at least 45 minutes (or freeze for 20 minutes) before slicing.

Make the vanilla buttercream frosting

  • Beat the butter in the bowl of a stand mixer with a paddle attachment for about 2 minutes, until it's smooth. Alternatively, you can use a hand mixer.
    1½ cups unsalted butter softened to room temperature
  • Add the powdered sugar, vanilla extract, and cream and start mixing on low speed. It will look gloopy at first, but don't worry; it will come together. Gradually increase to medium high speed and beat for 10 minutes, scraping the sides of the bowl a few times.
    3 cups powdered sugar, 1½ teaspoons vanilla extract, ½ cup heavy cream or heavy whipping cream
  • Beat on low speed for 1 or 2 more minutes to get rid of any air bubbles.
  • Stir it with a rubber spatula.

Assemble and Decorate the Cake

  • Place one cake layer on a serving plate, cake stand, or turntable. Remove the blueberry filling from the refrigerator and stir it to make it spreadable. Spread about ¾ cup of buttercream evenly over the top. Fill a piping bag with another ¾ cup of buttercream and pipe a border around the edge. Spoon the blueberry filling into the center and gently spread it to the border.
  • Carefully set the second cake layer on top. Apply a thin crumb coat of buttercream over the entire cake, then chill in the refrigerator for 30 minutes (or freeze for 10 minutes) to set the frosting.
  • Remove the cake and frost the top and sides with a final layer of buttercream, smoothing with an offset spatula or bench scraper. Reserve some frosting to pipe swirls around the top edge. Garnish with fresh blueberries, if desired.

  • Slice, serve, and enjoy!
  • Store any leftovers in the fridge for up to 4 days. Let the cake come to room temperature before serving.

I have used weight measurements for all the recipes on this website. Even though I have also included American volume measurements for convenience, I highly recommend using a digital kitchen scale to weigh all ingredients for the most accurate measurements. Digital kitchen scales are more precise than cups, which is so important in baking, and they give the most accurate, consistent results. Happy baking!
