Carrot Mug Cake
This easy
carrot mug cake
is a perfect dessert for one. It's fluffy, moist, perfectly spiced, and ready in less than 2 minutes.

1 microwave-safe mug (with a capacity of at least 7-8 oz / 200-300g)
Ingredients
3 tablespoons all purpose flour
½ teaspoons baking powder
2 tablespoons light brown sugar
1 tablespoon light vegetable oil
2 tablespoons milk
2½ tablespoons freshly grated carrots
½ teaspoon ground cinnamon
a pinch of salt
a pinch of nutmeg (optional)
Instructions
Put everything into a mug and stir with a fork.
Microwave it until the carrot cake is set. My microwave oven is 1000 watts and it took 1 minute and 30 seconds.
Let it cool for about a minute
(it's very hot).
Serve with your favorite toppings, if desired.

Notes
If your microwave is more or less than 1000 watts, you may need to adjust the cooking time, accordingly.

Even though I have also included American volume measurements for convenience, I highly recommend using a digital kitchen scale to weigh all ingredients for the most accurate measurements. Digital kitchen scales are more precise than cups, which is so important in baking, and they give the most accurate, consistent results. Happy baking!
