This moist, oatmeal apple cake has all the flavors of fall with cinnamon, oats, fresh apples, and a crunchy cinnamon sugar topping! It's easy to make and packed with flavor!
2cupsoat flour (180g) (see note below to make your own)
½cupold-fashioned rolled oats (40g)
½cupgranulated sugar (100g)
¼cup light brown sugar, packed (50g)
2teaspoonsbaking powder
½teaspoonbaking soda
1 ½teaspoonsground cinnamon
¼teaspoonsalt
3medium applescored, peeled, and cubed into very small pieces
1cupbuttermilk (250ml) (or make sour milk by mixing 1 tablespoon white vinegar with 1 cup milk and let it sit for a few minutes)
¼cuplight vegetable oil (60ml)(+ some extra to grease the pan)
2medium eggsat room temperature
1teaspoonvanilla
For the cinnamon sugar topping
½tablespoonmelted unsalted butter (7.5g)
¼cupsugar (50g)
½teaspoonground cinnamon
Instructions
Grease an 8-inch (20cm) springform pan and line the bottom with parchment paper. Set it aside.
In a large bowl, whisk together the oat flour, rolled oats, baking powder, baking soda, cinnamon, and salt. Set aside.

In another medium bowl, whisk together the buttermilk (or sour milk), eggs, vanilla, brown sugar, granulated sugar and oil until combined.
½ cup granulated sugar (100g) , ¼ cup light brown sugar, packed (50g), 1 cup buttermilk (250ml) , 2 medium eggs, 1 teaspoon vanilla, ¼ cup light vegetable oil (60ml)
Pour the wet ingredients into the bowl with the flour mixture and whisk together until well-combined, but don't overmix. It will be thin.
Fold in the chopped apples and mix until just combined.

Pour the batter into the prepared pan and even the surface.
Meanwhile, preheat the oven to 350℉ / 180℃. This will give the oats enough time to soak a bit.
Make the cinnamon sugar topping: In a small bowl, stir together the sugar, melted butter and cinnamon until well-combined.
½ tablespoon melted unsalted butter (7.5g) , ¼ cup sugar (50g) , ½ teaspoon ground cinnamon
Sprinkle the cinnamon sugar all over the top of the batter and bake for about 50-60 minutes or until a toothpick inserted in the middle comes out clean.
When done, remove the cake from the oven and let it cool in the pan for 30 minutes.
Run a knife around the edge of the pan and release the ring.

Notes
Make your own oat flour. Simply blend old-fashioned oats in a food processor until powdery.
Chop apples into small, even pieces to ensure they bake evenly.
Avoid overmixing – stir until just combined to keep the cake light and fluffy.
Let the cake cool in the pan for 30 minutes before slicing so that the cake doesn't fall apart.
