There is no all purpose flour in this cake, so it doesn't have the same crumb or texture as a normal cake. It tastes like oatmeal, but in a cake form! And it has a wonderful, crunchy cinnamon sugar topping.

- Sugar - I use a combination of granulated sugar and brown sugar. I love the caramel flavor of brown sugar and I think it really complements the apples and oats beautifully.
- Vanilla - I use pure vanilla extract.
- Buttermilk - It really adds richness to the cake. You can also use sour milk if you don't have buttermilk on hand. Just add 1 tablespoon of vinegar to a cup and then fill it with milk. Give it a stir and let it sit for a few minutes.
- Eggs - You'll need 2 medium eggs.
- Cinnamon - It really brings out the natural sweetness of the apples and give a cozy, apple pie flavor.

How to make this oatmeal cake with fresh apples
Step-by-step Instructions
1. In a large mixing bowl, whisk together the all the dry ingredients.
2. In another bowl, whisk together the wet ingredients.
3. Whisk the wet and dry ingredients together.
4. Peel, core, and chop the apples into small, even pieces.
5. Add the chopped apples and fold everything with a silicone spatula until well-combined.
6.Pour the batter into the springform pan.
7. Put the cinnamon, sugar, and melted butter in a small bowl. Stir everything until combined.
8. Sprinkle the cinnamon sugar topping all over the top of the cake. Then bake!

Easy Apple Oatmeal Cake

Ingredients
For the cake
- 2 cups (180g) oat flour (see note below to make your own)
- ½ cup (45g) old-fashioned rolled oats
- ½ cup (100g) granulated sugar
- ¼ cup (50g) light brown sugar, packed
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 1 ½ teaspoons ground cinnamon
- ¼ teaspoon salt
- 3 medium apples cored, peeled, and cubed into very small pieces
- 1 cup (250ml) buttermilk (or make sour milk by mixing 1 tablespoon white vinegar with 1 cup milk and let it sit for a few minutes)
- ¼ cup (60ml) light vegetable oil (+ some extra to grease the pan)
- 2 medium eggs at room temperature
- 1 teaspoon vanilla
For the cinnamon sugar topping
- ½ tablespoon (7.5g) melted unsalted butter
- ¼ cup (50g) sugar
- ½ teaspoon ground cinnamon

- Grease an 8-inch (20cm) springform pan and line the bottom with parchment paper. Set it aside.
- In a large bowl, whisk together the oat flour, rolled oats, baking powder, baking soda, cinnamon, and salt. Set aside.2 cups (180g) oat flour (see note below to make your own), ½ cup (45g) old-fashioned rolled oats, 2 teaspoons baking powder, ½ teaspoon baking soda, 1 ½ teaspoons ground cinnamon, ¼ teaspoon salt
- In another medium bowl, whisk together the buttermilk (or sour milk), eggs, vanilla, brown sugar, granulated sugar and oil until combined.½ cup (100g) granulated sugar, ¼ cup (50g) light brown sugar, packed, 1 cup (250ml) buttermilk, 2 medium eggs, 1 teaspoon vanilla, ¼ cup (60ml) light vegetable oil
- Pour the wet ingredients into the bowl with the flour mixture and whisk together until well-combined, but don't overmix. It will be thin.
- Fold in the chopped apples and mix until just combined.3 medium apples
- Pour the batter into the prepared pan and even the surface.
- Meanwhile, preheat the oven to 350℉ / 180℃. This will give the oats enough time to soak a bit.
- Make the cinnamon sugar topping: In a small bowl, stir together the sugar, melted butter and cinnamon until well-combined.½ tablespoon (7.5g) melted unsalted butter, ¼ cup (50g) sugar, ½ teaspoon ground cinnamon
- Sprinkle the cinnamon sugar all over the top of the batter and bake for about 50-60 minutes or until a toothpick inserted in the middle comes out clean.
- When done, remove the cake from the oven and let it cool in the pan for 30 minutes.
- Run a knife around the edge of the pan and release the ring.
