Easy Fluffy Vegan Chocolate Mousse (Only 2 Ingredients)
Looking for a healthier chocolate fix that only takes a few minutes to make? Look no further! This is the BEST vegan chocolate mousse you will ever make! It’s a magical, two ingredient dark chocolate mousse that you can whip up in no time!

Ingredients
- 1 can full fat coconut milk (400 ml / 13.5 fl oz)
- 8.8 oz (250 g) dark chocolate, preferably with at least 72 % cocoa solids, melted* Note: The cocoa percentage of the chocolate affects the texture. Chocolate with around 70% cocoa or higher thickens almost immediately, while lower percentages may need extra chilling time to fully set.

Instructions
- Place the can of coconut milk in the refrigerator overnight, or in the freezer for about 15 minutes, until well chilled.1 can full fat coconut milk (400 ml / 13.5 fl oz)
- Pour the chilled coconut milk into a mixing bowl and beat with an electric mixer on medium speed until smooth and creamy.
- Add the melted chocolate and continue beating for about 2 minutes, until fully combined.8.8 oz (250 g) dark chocolate, preferably with at least 72 % cocoa solids, melted*
- If the mousse looks light and fluffy, it’s ready to serve. If it looks loose, spoon it into serving cups and refrigerate for 30-60 minutes, until thickend. It will continue to firm up the longer it chills.
- Serve with chocolate shavings, if using.

Notes
*To melt the chocolate: You can melt it in the microwave in 30-second intervals, stirring between each, or place it in a heatproof bowl over gently simmering water and stir until smooth. I prefer the stovetop method, as it gives more control and helps prevent scorching.
Cover any leftovers with plastic wrap and store in the refrigerator for up to 4 days.
