Caramel Peach Upside-Down Cake with Bourbon

This caramel peach upside-down cake has fresh peaches, a soft almond crumb, and rich bourbon caramel. An easy, impressive summer dessert!

Whenever peach season rolls around, I want to make at least one dessert that really shows off the peaches. This is that cake for me. It's soft, buttery, and topped with fresh peaches and a rich bourbon caramel.

It's also surprisingly easy to make. You arrange the peach slices in the pan, spread the batter over them, and let the oven do the rest. The most exciting part comes at the end, when you flip it over and reveal that glossy, caramelized peach topping.

And then there's the bourbon caramel, which might just be my favorite part. Some of it stays around the peaches, while some seeps into the cake and creates little pockets of caramel throughout the crumb. It's so good!

I originally made this fresh peach upside-down cake in an 8-inch pan, but after retesting it, I now recommend a 9-inch (23cm) pan. It gives the cake a much better balance of peaches and caramel.

Quick Answers Before You Bake

Do you need to peel peaches for an upside-down cake?

No, you don't need to peel the peaches. The skins soften as the cake bakes and add some lovely color to the topping. You can peel them if you prefer, but it isn't necessary.

What are the best peaches for peach upside-down cake?

Use peaches that are ripe and flavorful but still firm enough to slice neatly. Very soft or overripe peaches release more juice and can make the topping mushy. Freestone peaches are particularly easy to work with because the pits separate cleanly from the flesh, but any fresh peach variety will work.

When should I invert a peach upside-down cake?

Let the cake cool in the pan for 15-20 minutes before inverting it. This gives the crumb time to firm up, but the caramel is still warm enough to release easily. Don't let the cake cool completely in the pan, or the topping may begin to stick.

Ingredients and Substitutions

You'll need a few simple ingredients for the bourbon caramel topping and the almond cake batter.

For the Peach and Bourbon Caramel Topping

Key ingredients:

  • Dark brown sugar: It gives the caramel a deeper, richer flavor than light brown sugar.
  • Bourbon: Replace it with cognac, brandy, or another whiskey. For an alcohol-free version, use orange juice or water.

For the Cake

What Pan Size Is Best?

A 9-inch (23 cm) round cake pan gives this recipe the best balance of cake, peaches, and bourbon caramel.

For a thinner caramel peach upside-down cake, you can use a 10-inch (25.4 cm) round pan. Because the batter is spread over a wider surface, it may bake faster, so begin checking it at around 40 minutes.

I don't recommend an 8-inch (20 cm) pan for the full quantity of batter because the finished cake becomes very tall and the cake layer can overpower the peach topping.

Thin or Thick Peach Slices?

I prefer slicing the peaches relatively thinly, approximately ¼ inch or slightly thinner.

Thin slices:

  • Soften evenly as the cake bakes.
  • Blend into the caramel more easily.
  • Are easier to overlap in a circular pattern.
  • Create a neater finished topping.

Try to keep the slices fairly even so they cook evenly.

How to Make Caramel Peach Upside-Down Cake

Step 1: Make the bourbon caramel

Combine the brown sugar, butter, and water in a small saucepan. Cook over medium heat, whisking until smooth and bubbling, then remove from the heat and stir in the bourbon and cinnamon.

Step 2: Prepare the pan and add the caramel

Generously grease the bottom and sides of a 9-inch (23 cm) round cake pan. Line the bottom with parchment paper and lightly grease the parchment. Pour in the warm caramel and spread it evenly over the bottom of the pan.

Step 3: Arrange the peach slices

Arrange the sliced peaches over the caramel, overlapping them slightly. Start around the outside of the pan and work toward the center.

Step 4: Combine the dry ingredients

Whisk together the all-purpose flour, almond flour, baking powder, and salt in a medium bowl. Set aside while you prepare the rest of the batter.

Step 5: Beat the butter and sugar

In a large bowl, beat the softened butter and granulated sugar on medium speed for 2-3 minutes, until light and creamy.

Beat in the vanilla, followed by the eggs one at a time. Mix well after each addition and scrape down the bowl as needed.

Step 7: Finish the cake batter

With the mixer on low speed, add the dry ingredients in three additions, alternating with the homemade buttermilk substitute in two additions. Begin and end with the dry ingredients and mix just until combined.

Step 8: Spread the batter over the peaches

Spoon the batter carefully over the arranged peaches, then gently spread it into an even layer without disturbing the pattern. It's fine if a little caramel seeps into the batter.

Step 9: Bake and invert the cake

Bake for 50-55 minutes, until golden and a toothpick inserted into the cake layer comes out clean or with a few moist crumbs.

Then cool in the pan for 15-20 minutes, then carefully invert the cake onto a serving plate and remove the parchment paper.

Tips for the Best Caramel Peach Upside-Down Cake

  • Use ripe but firm peaches. Soft peaches can become mushy and release too much liquid.
  • Use a 9-inch (23 cm) pan for best results. A 10-inch (25.4 cm) pan will work but will produce a thinner cake.
  • Line the bottom of the pan. Parchment paper makes the caramelized peach topping much easier to release.
  • Don't overmix the batter. Once the flour is added, mix only until the batter comes together.
  • Don't flip it immediately. Let the cake sit for 15-20 minutes so the crumb can firm up.
  • Don't let it cool completely in the pan. The caramel may begin to harden and stick.

More Variations

Add More Spices

Add a pinch of ground ginger or nutmeg to the caramel for a warmer, more spiced flavor.

Use Nectarines

Nectarines can be used in place of the peaches. Choose fruit that is ripe but firm and slice it in the same way.

Use Peaches and Plums

Replace some of the peaches with firm sliced plums for a slightly more tart fruit topping.

Add Almond Extract

For a more noticeable almond flavor, replace part of the vanilla with a small amount of almond extract. Almond extract is quite strong, so about ¼ teaspoon is usually enough.

How to Serve Peach Upside-Down Cake

This bourbon peach upside-down cake can be served slightly warm, at room temperature, or cold from the refrigerator.

It's especially good with:

  • Vanilla ice cream
  • Lightly sweetened whipped cream
  • Bourbon whipped cream
  • A small drizzle of salted caramel sauce

The cake already has plenty of caramel, so extra sauce isn't essential. But I certainly won't be the one to stop you from adding more!

Storage & Freezing

Store the cake covered or in an airtight container in the refrigerator for up to 4 days.

You can serve it cold, allow it to come to room temperature, or warm individual slices in the microwave for approximately 20-30 seconds.

I recommend freezing individual slices rather than the entire cake.

Wrap each slice tightly in plastic wrap and place it in a freezer-safe container or freezer bag. Freeze for up to 2 months.

Thaw overnight in the refrigerator. The peaches may be a little softer after freezing and thawing, but the cake will still taste delicious.

Frequently asked questions 

How do you keep an upside-down cake from sticking?

What works best for me is buttering the pan well (including the sides) and then lining the bottom with parchment paper. I never had my cake stick to the pan this way. Avoid letting the cake become completely cold in the pan because the caramel can harden and stick.

Can I make peach upside-down cake the day before?

Yes. Bake and invert the cake, then allow it to cool completely.
Cover it and store it in the refrigerator. Bring it to room temperature before serving or warm individual slices briefly.

Can I use canned or frozen peaches?

Fresh peaches will give you the best texture and appearance.
Canned and frozen peaches contain more moisture and may make the topping softer or wetter. I haven't tested either one in this particular recipe, so I recommend using fresh peaches for the most reliable results.

Ingredients

For the Peach and Bourbon Caramel Topping

  • 3 medium ripe but firm peaches washed, pitted, and thinly sliced, about 1 pound before pitting (400-450 g)
  • ¾ cup packed dark brown sugar 150 g
  • 2 tablespoons unsalted butter 28 g
  • 2 tablespoons water 30 ml
  • ½ teaspoon ground cinnamon
  • 1 -2 tablespoons bourbon 15-30 ml

For the Cake

  • 2 cups all-purpose flour 250 g
  • ½ cup fine almond flour or finely ground blanched almonds 60 g
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter at room temperature (113 g)
  • ¾ cup granulated sugar 150 g
  • 2 medium eggs at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup homemade buttermilk, at room temperature (250 ml) To make it, add 1 tablespoon white vinegar or lemon juice to a measuring cup, then add enough whole milk to make 1 cup (250 ml) total. Stir and let stand for 5-10 minutes.

Instructions

Prepare the Pan and Peaches

  • Preheat the oven to 350°F (180°C). Generously grease the bottom and sides of a 9-inch (23 cm) round cake pan. Line the bottom with parchment paper.
  • Cut the peaches in half, remove the pits, and cut them into thin, even slices. Set aside.
    3 medium ripe but firm peaches

Make the Bourbon Caramel Topping

  • In a small saucepan, combine the dark brown sugar, butter, and water. Cook over medium heat, whisking until the butter has melted and the mixture is smooth and bubbling, about 1-2 minutes.
    ¾ cup packed dark brown sugar, 2 tablespoons unsalted butter, 2 tablespoons water
  • Remove the saucepan from the heat and stir in the bourbon and cinnamon. Pour the caramel evenly into the prepared pan. Arrange the peach slices over the caramel, overlapping them slightly. I usually start around the outside of the pan and work my way toward the center. You can also begin in the center and work outward, so use whichever method feels easiest.
    1 -2 tablespoons bourbon, ½ teaspoon ground cinnamon

Make the Cake Batter

  • In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt. Set aside.

  • In a separate large bowl, beat the butter and sugar on medium speed until light and creamy, about 2-3 minutes.
    ½ cup unsalted butter, ¾ cup granulated sugar
  • Add the vanilla, followed by the eggs one at a time, beating well after each addition. Scrape down the sides and bottom of the bowl as needed.
    1 teaspoon pure vanilla extract, 2 medium eggs
  • With the mixer on low speed, add the flour mixture in three additions, alternating with the homemade buttermilk in two additions. Begin and end with the flour mixture. Mix just until combined. Do not overmix.
    1 cup homemade buttermilk, at room temperature (250 ml)
  • Spoon the batter over the arranged peaches and gently spread it into an even layer. It's fine if a little caramel seeps into the batter.

Bake and Invert the Cake

  • Bake for 50-55 minutes, or until the cake is golden and a toothpick inserted into the center of the cake layer comes out clean or with a few moist crumbs.
  • Allow the cake to cool in the pan for 15-20 minutes.
  • Run a thin knife or offset spatula around the edge of the cake to loosen it.
  • Place a large serving plate or platter over the pan. Using oven mitts, hold the pan and plate securely together and carefully flip them over.
  • Let the inverted pan sit for a few seconds, then gently lift it away. Carefully peel off the parchment paper. If a peach slice sticks to the parchment, simply place it back on the cake.
  • Serve slightly warm, at room temperature, or chilled with vanilla ice cream or whipped cream.

Homemade Buttermilk Substitute
I used a homemade buttermilk substitute for this recipe. Store-bought buttermilk works well, too, although the flavor will be a little tangier and the batter may be slightly thicker.
To make the homemade substitute, place 1 tablespoon white vinegar or lemon juice in a measuring cup. Add enough whole milk to make 1 cup total (250 ml). Stir and let it stand for 5–10 minutes before using.
Pan Size
A 9-inch (23 cm) round cake pan gives the best balance of cake, peaches, and caramel.
You can also use a 10-inch (25 cm) round pan for a thinner cake. You may need 3–4 peaches to cover the wider surface. Begin checking for doneness at around 40 minutes because the thinner cake may bake faster.
I don’t recommend using an 8-inch pan for the full recipe because the cake will be quite tall.
Bourbon Substitutions
You can replace the bourbon with the same amount of cognac, brandy, or your favorite whiskey.
For an alcohol-free version, leave it out or replace it with the same amount of orange juice or water. Orange juice adds a subtle citrus flavor that pairs nicely with the peaches and cinnamon.
Tips for Success
  • For the most accurate results, weigh your ingredients.
  • Use ripe but firm peaches so they hold their shape and don't release too much liquid.
  • Use a 9-inch (23 cm) round cake pan. A 10-inch (25 cm) pan also works, but the cake will be thinner and may bake faster.
  • Line the bottom of the pan with parchment paper for easier release.
  • Mix the batter only until just combined, don't overmix.
  • Let the cake cool for 15-20 minutes before inverting, but don't let it cool completely or the caramel may stick.

Freezing
Wrap individual slices securely and place them in an airtight freezer-safe container. Freeze for up to 2 months and thaw overnight in the refrigerator. The peaches may become slightly softer after freezing and thawing.

Even though I have also included American volume measurements for convenience, I highly recommend using a digital kitchen scale to weigh all ingredients for the most accurate measurements.
