No churn ice cream is homemade ice that's made without an ice cream maker. It's often made with a few ingredients and simple equipment, like a hand mixer.
How does no churn ice cream differ from traditional ice cream?
For traditional ice cream, you need to churn it constantly in an ice cream machine to incorporate air while it's freezing. No churn ice cream is really similar to traditional ice cream as its texture is velvety smooth, thanks to the sweetened condensed milk and heavy whipping cream in the base.
What does this chocolate marshmallow ice cream taste like?
This is basically rocky road ice cream without nuts! It has a very rich chocolate flavor, since I use both cocoa powder and melted semisweet chocolate. The marshmallows do not freeze at all and they have a wonderful soft and fluffy texture throughout the ice cream. I love how they're still chewy.
WHAT YOU NEED TO MAKE THIS RECIPE
Ingredients for chocolate marshmallow ice cream
Melted chocolate - I use semisweet dark chocolate, which makes the ice cream extra chocolaty.
Cocoa powder - I use Dutch-processed unsweetened cocoa powder.
Heavy cream - You'll need heavy whipping cream for this recipe or whipping cream with at least 35% fat content.
Sweetened condensed milk - You'll need a whole can for this recipe. It's essential because it adds sweetness, so you don't have to add any extra sugar.
Marshmallows - I use mini marshmallows for this recipe because they're easier to incorporate into the ice cream mixture.

HOW TO MAKE CHOCOLATE MARSHMALLOW ICE CREAM
Step-by-step Instructions
Whip the heavy cream to stiff peaks.
In another bowl, mix the melted chocolate, cocoa powder, and sweetened condensed milk.
Fold in the whipped cream and the mini marshmallows.
Make sure everything is fully combined and there are no more white streaks from the whipped cream.
Then transfer the mixture to a freezer-safe container. Cover the surface with plastic wrap and then some foil and freeze.

You need to freeze this ice cream for 8 hours or overnight.
If stored properly, this ice cream will last about 2 months.
Variations
Make Rocky Road Ice cream - Just add some sliced almonds (or your favorite nuts) to the mixture.
Make S'mores Ice cream - Add some crushed graham crackers and chocolate chips or chunks. Or you could also add some toasted marshmallows to the base or to serve on top.
Make Toasted Coconut Ice Cream - Coconut is amazing with chocolate! I usually toast some coconut flakes in a non-stick frying pan and then add it to the ice cream base. You could also top the ice cream with some more toasted coconut.
Make Chocolate Marshmallow Swirl Ice Cream - You can swirl some marshmallow fluff in layers (add half the ice cream base, top with some marshmallow fluff, add the remaining base). The ice cream will have gooey marshmallow swirled throughout.
Make Chocolate Peanut Butter Marshmallow Ice Cream - Peanut butter pairs really well with both chocolate and marshmallows! Just add about ½ cup creamy peanut butter to the base. Taste it to see if you want to add more peanut butter before freezing.
HOW TO SERVE THIS ICE CREAM
I toasted a few marshmallows and put them on top of the ice cream before serving.
To make it even more indulgent, you can serve this ice cream with some homemade chocolate syrup or some easy homemade salted caramel sauce on top.
TIPS FOR SUCCESS
Chill a mixing bowl - This will help your cream whip up much faster.
Choose the right cream - You need heavy whipping cream (or whipping cream with at least 35% fat) in order to make whipped cream.
Whipping the cream - You need to whip the cream to stiff peaks. This is particularly important for the airy texture in the ice cream. Don't overdo it, though. If you beat the cream too long, it could turn into butter.
Be gentle when folding - You need to be gentle when folding the ingredients together because you don't want to deflate the air that's been incorporated into the whipped cream, which could make the ice cream dense.

Chocolate Marshmallow Ice Cream
Ingredients
- 4.4oz (125g) semisweet chocolate, melted and cooled
- 1 14-ounce can (397g) sweetened condensed milk
- ½ cup (2oz/60g) unsweetened cocoa powder (I use Dutch-processed)
- 2 cups (500ml) heavy whipping cream (or whipping cream with at least 35% fat)
- 3.2 oz / 90g (about 1½ cups) mini marshmallows + a few extra for garnish
Instructions
- Pull the marshmallows apart if there are any stuck together. Set aside.
- Whip the heavy cream to stiff peaks. Put it in the refrigerator while moving on to the next step.
- In a large bowl, mix the cooled melted chocolate, cocoa powder, and sweetened condensed milk with a hand mixer until combined.
- Fold in the whipped cream and the mini marshmallows. Make sure everything is fully incorporated and there are no more white streaks from the whipped cream.
- Then transfer the mixture to a freezer-safe container. If you want, press some more marshmallows on the surface.
- Cover the surface with plastic wrap and then some foil and freeze for 8 hours (or overnight).
- Serve with more marshmallows, if desired.
