These easy no-bake pumpkin pie cups taste just like classic pumpkin pie: rich, creamy, and perfectly spiced. They're sure to be a hit on Thanksgiving!

I usually make classic pumpkin pie for Thanksgiving, but this year I wanted to try something different. These no-bake pumpkin pie cups are my shortcut version: same cozy spices and rich pumpkin flavor, but in a creamy little dessert. It's a simpler twist on a classic Thanksgiving dessert.

What you'll need

Ingredients for no-bake pumpkin pie cups

  • Cookie Crumbs: I use Biscoff cookie crumbs, but graham crackers, digestive biscuits, or gingersnaps work great, too. Biscoff has a wonderful cinnamon flavor that is amazing with pumpkin.
  • Butter: I prefer using unsalted butter.
  • Pumpkin purée: Make sure you use 100% pure pumpkin purée. My favorite is Libby's. Do not use pumpkin pie filling; it already has sugar and spices and it won't work well for this recipe.
  • Sweetened condensed milk: I love how it adds just the right amount of sweetness and creaminess without needing to add extra sugar or heavy cream.
  • Unflavored gelatin and cold water: The gelatin gives the filling its smooth, creamy texture, and the cold water helps it dissolve evenly.
  • Spices: I use a combination of cinnamon, ginger, and nutmeg. You can replace the ginger and nutmeg with 1 teaspoon pumpkin pie spice, but definitely keep the cinnamon!
  • Salt: It enhances the overall flavor.

How to make Pumpkin Pie Cups

Step-by-step Instructions

Step 1: Bloom the Gelatin

In a small bowl, sprinkle the gelatin over cold water and stir. Let it sit for about 5 minutes until it's spongy. Set aside.

Step 2: Make the Crumb Base

Combine the cookie crumbs and the melted butter. Divide evenly among 6 half-pint jars (about 2 tablespoons per jar) and press lightly.

Whisking together pumpkin puree, condensed milk, cinnamon, ginger, nutmeg and salt in a medium saucepan.

Step 3: Prepare the Pumpkin Mixture

In a saucepan, whisk together the pumpkin purée, condensed milk, cinnamon, ginger, nutmeg, and salt. Warm gently over low-medium heat, stirring often, but don't boil.

Step 4: Add the Gelatin

When the mixture is warm, add the bloomed gelatin.

Step 5: Whisk the Mixture

Then, whisk until the gelatin is fully dissolved (about 1-2 minutes). Remove from heat and let it cool slightly.

Step 6: Assemble & Chill the dessert

Evenly spoon or pour the pumpkin mixture over the crumb bases, filling each jar about two-thirds full (140-150 ml / ⅔ cup). Refrigerate for about 2 hours, or until the filling is set.

Before serving, top with whipped cream and a sprinkle of cinnamon or cookie crumbs.

Recipe Notes

Make-ahead options

Prepare the crust and filling the night before, chill overnight, and add your toppings before serving the next day.

Storage Tips & Freezing Instructions

Refrigerate: Keep covered for up to 4-5 days.

Freezing: I do not recommend freezing this dessert, as gelatin breaks down after thawing, which can make the texture watery.

Variations 

  • Maple-Pecan Topping: Drizzle some warm maple syrup and sprinkle toasted pecans before serving.
  • Salted Caramel Swirl: Swirl a little homemade salted caramel into the filling before chilling or just drizzle it on top.

✅ Tips for success

  • Blooming the gelatin ensures it dissolves properly for a creamy texture. If you skip this step, the filling could get grainy.
  • Cool the filling slightly: Let the pumpkin mixture cool a few minutes before pouring it over the crust so that the base doesn't get mushy.
  • Chill thoroughly: Refrigerate for at least 2 hours so the filling has time to set.
  • Add toppings last minute: Add any toppings, like whipped cream, right before serving to keep the dessert fresh and prevent it from weeping into the filling.

Frequently asked questions 

Can I skip the gelatin and rely on chilling only?

I haven't tested this recipe without gelatin, but I think the filling would likely be too soft. The gelatin gives these cups their smooth, creamy texture and helps them hold their shape once chilled.

How far in advance can I make them?

You can make these 1-2 days ahead. Prepare, cover, and chill until set. Garnish just before serving.

Can I use canned pumpkin pie filling instead?

No, I don't recommend it. Canned pumpkin pie filling already contains sugar and spices, so it can make the dessert overly sweet and change the flavor. For best results, stick with 100% pumpkin purée.

Ingredients

  • 1 cup crushed Biscoff cookies or graham crackers digestive cookies, or gingersnap cookies (120 g)
  • 3½ tablespoons unsalted butter melted (50 g)

For the pumpkin filling

  • 1 can pumpkin purée 425 g / 15 oz (Not pumpkin pie filling)
  • 1 can sweetened condensed milk 397 g / 14 oz
  • 2½ teaspoons unflavored gelatin powder 7 g
  • 3 tablespoons cold water 45 ml
  • 1½ teaspoons ground cinnamon*
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt

For the topping (optional)

  • whipped cream
  • a sprinkle of cinnamon

Instructions

For the crust

    Bloom the gelatin

    • In a small bowl, sprinkle the gelatin over the cold water and stir.
      2½ teaspoons unflavored gelatin powder, 3 tablespoons cold water
    • Let it sit for about 5 minutes until it absorbs the water and becomes spongy. Set aside.

    Make the crumb base

    • In a bowl, combine the crushed cookies and melted butter.
      1 cup crushed Biscoff cookies or graham crackers, 3½ tablespoons unsalted butter
    • Divide the mixture evenly among 6 small cups or half-pint jars (about 2 tablespoons per cup).
    • Lightly press the crumbs into the bottom of each cup. Set aside.

    Prepare the pumpkin filling

    • In a medium saucepan, whisk together the pumpkin purée, condensed milk, cinnamon, ginger, nutmeg, and salt.
      1 can pumpkin purée, 1 can sweetened condensed milk, 1½ teaspoons ground cinnamon*, ½ teaspoon ground ginger, ¼ teaspoon ground nutmeg, ¼ teaspoon salt
    • Place over low to medium heat and warm gently, stirring often. Do not boil.
    • When warm, add the bloomed gelatin and whisk until fully dissolved (about 1-2 minutes).
    • Remove from the heat and let cool slightly.

    Assemble the cups & chill

    • Evenly spoon or pour the pumpkin mixture over the crumb bases, filling each cup about two-thirds full (around ⅔ cup or 140-150 ml).
    • Refrigerate for about 2 hours or until the filling is set and firm to the touch.
    • Before serving, top with whipped cream and lightly dust with cinnamon.

    *You can replace the ginger and nutmeg with 1 teaspoon pumpkin pie spice, but definitely keep the cinnamon - it really makes a difference!
