Raspberries can easily sink to the bottom of a loaf cake, especially when using large or frozen berries. After testing several different methods, I found that this approach works best:
First, the raspberries are lightly coated in cornstarch to help absorb surface moisture.
Next, most of the batter is added to the pan before the raspberries. Placing the fruit slightly higher in the loaf helps reduce sinking.
Finally, the cake starts baking at a higher temperature for the first 15 minutes. This helps the structure set early and supports the fruit.

How to Make Lemon Raspberry Loaf Cake

Step 1: Make the Lemon Sugar
Rub the granulated sugar and lemon zest together with your fingers in a small bowl until the sugar becomes fragrant and slightly damp. This helps release the natural oils from the zest for stronger lemon flavor.

Step 2: Mix the Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

Step 3: Cream the Butter and Lemon Sugar
Beat the softened butter in a large mixing bowl for about 1 minute until smooth. Add the lemon sugar and beat on medium speed for 3-4 minutes, until the mixture becomes light and fluffy.

Step 4: Add the Eggs, Lemon Juice and Vanilla
Beat in the eggs one at a time, mixing well after each addition. Add the lemon juice and vanilla extract and mix until combined.

Step 5: Alternate the Flour and Buttermilk
Add half of the flour mixture and half of the buttermilk to the batter and mix just until combined. Repeat with the remaining flour mixture and buttermilk and mix gently.

Step 6: Coat the Raspberries
Place the raspberries in a small bowl and gently toss them with the cornstarch.

Step 7: Add Most of the Batter to the Pan & Top with Raspberries
Spoon about three-quarters of the batter into the prepared loaf pan and spread it evenly. Scatter most of the coated raspberries over the batter, reserving about 6-8 raspberries for the top of the loaf in the next step.

Step 8: Add the Remaining Batter and Raspberries
Spoon the remaining batter over the top and gently spread it to cover the berries. Dot the reserved raspberries over the surface.

Step 9: Bake the Loaf
Bake the cake until golden.
After the cake has cooled completely, you can drizzle it with glaze.

Variations
Use a 9x5-inch (23×13 cm) Loaf Pan
You can bake this in a 9×5-inch (23×13 cm) loaf pan instead of an 8×4-inch (20×10 cm). The loaf will be slightly shorter and may bake a little faster, so start checking for doneness 5-10 minutes earlier.
Add a Streusel Topping
For a bakery-style variation, you can add a crumb topping before baking instead of glazing. Use the streusel from my Easy Cinnamon Streusel Muffins recipe and sprinkle it evenly over the batter before baking.
Skip the Glaze
If you prefer a less sweet loaf, you can leave off the glaze and dust the top lightly with powdered sugar instead.
Tips for Success
- Use room temperature ingredients. Softened butter and room temperature eggs help the batter mix evenly and create better structure.
- Don't overmix the batter. Mix just until combined once the flour is added. Overmixing can make the loaf dense.
- Coat the raspberries right before using. Toss them with cornstarch just before assembling the loaf to prevent excess moisture.
- Add the raspberries in layers. Add most of the batter to the pan first, then scatter most of the raspberries over it. Top with the remaining batter and finish with the reserved raspberries on top. This helps reduce sinking.
- Start at a higher temperature. Baking at 375°F (190°C) for the first 15 minutes helps set the structure of the cake early on, so the berries don't sink to the bottom.

Store the loaf in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days.
Freezing Instructions
This loaf freezes really well, with or without the glaze.
Let the cake cool completely first. Then slice it if you prefer freezing individual portions.
My usual method:
I place the slices on a tray and flash freeze them for about 1 hour until firm (this keeps them from sticking together). Then I wrap each slice in plastic wrap and place them in a freezer bag or freezer-safe container. This way, you can easily grab one slice at a time.
The loaf will keep well in the freezer for up to about 2 months. To thaw, just leave a slice in the refrigerator overnight. You can keep it wrapped in the bag while it thaws.

- Spoon the remaining batter over the top and carefully spread it to cover the raspberries. Dot the reserved raspberries on top.
- Bake at 375°F (190°C) for 15 minutes. Without opening the oven door, reduce the temperature to 350°F (180°C) and continue baking for 45-55 minutes, or until done. Loosely tent with foil after about 30 minutes if the top is browning too quickly.
- Note: If using a 9x5-inch (23x13 cm) loaf pan, begin checking for doneness 5-10 minutes earlier, as the loaf may bake faster.
- The loaf is done when a toothpick inserted in the center comes out with a few moist crumbs but no wet batter.
- Cool in the pan for about 15-20 minutes, then lift out and transfer to a wire rack to cool completely before glazing.
Make the glaze
- Whisk together the powdered sugar, lemon juice, and milk until thick and smooth.1 cup powdered sugar (120g), 1 tablespoon fresh lemon juice , 1½ teaspoons milk
