This lemon raspberry loaf cake uses simple ingredients you may already have in your kitchen. Here are the key ones and a few helpful tips before you start baking.

Key Ingredients

  • Butter: Use softened, room temperature butter so it creams properly with the sugar. 
  • Lemon Juice & Zest: Fresh lemon juice works best, but the zest is what really gives this cake its beautiful lemon flavor. Rub the lemon zest into the sugar before mixing to release the natural oils.
  • Buttermilk: Buttermilk keeps the crumb soft and tender without making the cake heavy.
  • Raspberries (Fresh or Frozen): This recipe works with either. If using frozen raspberries, don't thaw them first. Toss them lightly with cornstarch just before adding to the batter to prevent excess moisture.
  • Powdered sugar: Used to make the simple lemon glaze. Lemon juice gives it light citrus flavor, while a little milk helps balance the sweetness and create a smooth drizzle.

How to make your own buttermilk

Making your own homemade buttermilk is so easy! Simply add a little lemon juice or vinegar to regular milk and let it sit for a few minutes. The milk will slightly thicken and develop a light tang.

How to prevent raspberries from sinking

Raspberries can easily sink to the bottom of a loaf cake, especially when using large or frozen berries. After testing several different methods, I found that this approach works best:

First, the raspberries are lightly coated in cornstarch to help absorb surface moisture.

Next, most of the batter is added to the pan before the raspberries. Placing the fruit slightly higher in the loaf helps reduce sinking.

Finally, the cake starts baking at a higher temperature for the first 15 minutes. This helps the structure set early and supports the fruit.

Equipment you'll need

  • 8×4-inch (20x10 cm) loaf pan
  • mixing bowls
  • hand mixer or stand mixer
  • rubber spatula
  • cooling rack

How to Make Lemon Raspberry Loaf Cake

Step 1: Make the Lemon Sugar

Rub the granulated sugar and lemon zest together with your fingers in a small bowl until the sugar becomes fragrant and slightly damp. This helps release the natural oils from the zest for stronger lemon flavor.

Step 2: Mix the Dry Ingredients

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

Butter and lemon sugar creamed together until light and fluffy.

Step 3: Cream the Butter and Lemon Sugar

Beat the softened butter in a large mixing bowl for about 1 minute until smooth. Add the lemon sugar and beat on medium speed for 3-4 minutes, until the mixture becomes light and fluffy.

Step 4: Add the Eggs, Lemon Juice and Vanilla

Beat in the eggs one at a time, mixing well after each addition. Add the lemon juice and vanilla extract and mix until combined.

Step 5: Alternate the Flour and Buttermilk

Add half of the flour mixture and half of the buttermilk to the batter and mix just until combined. Repeat with the remaining flour mixture and buttermilk and mix gently.

Step 6: Coat the Raspberries

Place the raspberries in a small bowl and gently toss them with the cornstarch.

Step 7: Add Most of the Batter to the Pan & Top with Raspberries

Spoon about three-quarters of the batter into the prepared loaf pan and spread it evenly. Scatter most of the coated raspberries over the batter, reserving about 6-8 raspberries for the top of the loaf in the next step.

Step 8: Add the Remaining Batter and Raspberries

Spoon the remaining batter over the top and gently spread it to cover the berries. Dot the reserved raspberries over the surface.

Step 9: Bake the Loaf

Bake the cake until golden.

After the cake has cooled completely, you can drizzle it with glaze.

Variations

Use a 9x5-inch (23×13 cm) Loaf Pan

You can bake this in a 9×5-inch (23×13 cm) loaf pan instead of an 8×4-inch (20×10 cm). The loaf will be slightly shorter and may bake a little faster, so start checking for doneness 5-10 minutes earlier.

Add a Streusel Topping

For a bakery-style variation, you can add a crumb topping before baking instead of glazing. Use the streusel from my Easy Cinnamon Streusel Muffins recipe and sprinkle it evenly over the batter before baking.

Skip the Glaze

If you prefer a less sweet loaf, you can leave off the glaze and dust the top lightly with powdered sugar instead.

Tips for Success

  • Use room temperature ingredients. Softened butter and room temperature eggs help the batter mix evenly and create better structure.
  • Don't overmix the batter. Mix just until combined once the flour is added. Overmixing can make the loaf dense.
  • Coat the raspberries right before using. Toss them with cornstarch just before assembling the loaf to prevent excess moisture.
  • Add the raspberries in layers. Add most of the batter to the pan first, then scatter most of the raspberries over it. Top with the remaining batter and finish with the reserved raspberries on top. This helps reduce sinking.
  • Start at a higher temperature. Baking at 375°F (190°C) for the first 15 minutes helps set the structure of the cake early on, so the berries don't sink to the bottom.

Storage Tips & Freezing Instructions

Store the loaf in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days. 

Freezing Instructions
This loaf freezes really well, with or without the glaze.

Let the cake cool completely first. Then slice it if you prefer freezing individual portions.

My usual method:
I place the slices on a tray and flash freeze them for about 1 hour until firm (this keeps them from sticking together). Then I wrap each slice in plastic wrap and place them in a freezer bag or freezer-safe container. This way, you can easily grab one slice at a time.

The loaf will keep well in the freezer for up to  about 2 months. To thaw, just leave a slice in the refrigerator overnight. You can keep it wrapped in the bag while it thaws.

Frequently Asked Questions

Can I use frozen raspberries in lemon raspberry loaf cake?

Yes. Frozen raspberries work well in this recipe. Add them directly to the batter without thawing and toss them lightly with cornstarch first to help prevent excess moisture.

Can I use other berries instead of raspberries?

Yes. Blueberries or blackberries work well in this loaf. Keep in mind that different berries may release slightly different amounts of moisture.

Why did my raspberries sink to the bottom of the loaf?

Raspberries can sometimes sink because they release moisture as the cake bakes. Tossing them lightly with cornstarch and layering them between the batter helps keep them more evenly distributed.

Ingredients

For the Lemon Raspberry Cake

  • 1 cup granulated sugar (200 g)
  • 2 tablespoons lemon zest from about 2 medium lemons
  • 2¼ cups all-purpose flour (280 g)
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened (113 g)
  • 2 large eggs, room temperature
  • 1 tablespoon fresh lemon juice (15 ml)
  • ¾ cup buttermilk, room temperature (180 ml) or make your own by mixing ¾ cup milk + 2¼ teaspoons lemon juice and letting it sit for 5 minutes
  • 1 teaspoon vanilla extract
  • 6 ounces (160g) fresh or frozen raspberries (do not thaw if using frozen)
  • 1½ teaspoons cornstarch

For the Glaze

  • 1 cup powdered sugar (120g)
  • 1 tablespoon fresh lemon juice
  • 1½ teaspoons milk

Optional

  • Extra fresh raspberries for garnish

Instructions

  • Preheat oven to 375°F (190°C). Line an 8x4-inch (20×10 cm) loaf pan with parchment paper, leaving some overhang for easy removal.
  • In a small bowl, rub together the granulated sugar and lemon zest using your fingers until fragrant and slightly damp. Set aside.
    1 cup granulated sugar (200 g), 2 tablespoons lemon zest from about 2 medium lemons
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
    2¼ cups all-purpose flour (280 g), 1½ teaspoons baking powder, ½ teaspoon baking soda, ¼ teaspoon salt
  • In a large mixing bowl, beat the softened butter for about 1 minute until smooth. Add the lemon sugar and beat on medium speed for 3-4 minutes, until light and fluffy.
    ½ cup unsalted butter, softened (113 g)
  • Beat in the eggs one at a time, mixing well after each addition.

  • Mix in the lemon juice and vanilla extract until combined.

  • Add half of the flour mixture and half of the buttermilk. Mix just until combined. Repeat with the remaining flour mixture and buttermilk. Do not overmix.
    ¾ cup buttermilk, room temperature (180 ml)
  • Place the raspberries in a small bowl and gently toss with the cornstarch. Do this step immediately before assembling the loaf so the berries don't release excess moisture while sitting.
    6 ounces (160g) fresh or frozen raspberries (do not thaw if using frozen), 1½ teaspoons cornstarch
  • Spoon about three-quarters of the batter into the prepared pan, spreading it evenly. The pan should be a little more than half full.
  • Scatter most of the raspberries evenly over the batter, reserving about 6-8 to dot on top. Try to distribute them across the surface instead of piling them in one spot.
  • Spoon the remaining batter over the top and carefully spread it to cover the raspberries. Dot the reserved raspberries on top.
  • Bake at 375°F (190°C) for 15 minutes. Without opening the oven door, reduce the temperature to 350°F (180°C) and continue baking for 45-55 minutes, or until done. Loosely tent with foil after about 30 minutes if the top is browning too quickly.
  • Note: If using a 9x5-inch (23x13 cm) loaf pan, begin checking for doneness 5-10 minutes earlier, as the loaf may bake faster.
  • The loaf is done when a toothpick inserted in the center comes out with a few moist crumbs but no wet batter.
  • Cool in the pan for about 15-20 minutes, then lift out and transfer to a wire rack to cool completely before glazing.

Make the glaze

  • Whisk together the powdered sugar, lemon juice, and milk until thick and smooth.
    1 cup powdered sugar (120g), 1 tablespoon fresh lemon juice , 1½ teaspoons milk
  • Spread the glaze over the cooled loaf. Garnish with fresh raspberries, if desired.

  • Mix just until combined to avoid a dense loaf.
  • Toss raspberries with cornstarch right before using.
Storage & Freezing
Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days.
Freeze for up to 2 months. Let the loaf cool completely, then freeze whole or in slices. Thaw overnight in the refrigerator.
