This moist, oatmeal apple cake has all the flavors of fall with cinnamon, oats, fresh apples, and a crunchy cinnamon sugar topping! It's easy to make and packed with flavor!

What does this oatmeal apple cake taste like?

There is no all purpose flour in this cake, so it doesn't have the same crumb or texture as a normal cake. It tastes like oatmeal, but in a cake form! And it has a wonderful, crunchy cinnamon sugar topping.

What you need to make this cake

Ingredients for oatmeal apple cake

  • Apples - I use fresh, sweet apples, but you could use tart ones if you prefer.
  • Old fashioned oats - I make my own oat flour for this cake and add extra old fashioned oats for texture. You could also buy store-bought oat flour.
  • Sugar - I use a combination of granulated sugar and brown sugar. I love the caramel flavor of brown sugar and I think it really complements the apples and oats beautifully.
  • Vanilla - I use pure vanilla extract.
  • Buttermilk - It really adds richness to the cake. You can also use sour milk if you don't have buttermilk on hand. Just add 1 tablespoon of vinegar to a cup and then fill it with milk. Give it a stir and let it sit for a few minutes.                       
  • Eggs - You'll need 2 medium eggs.
  • Cinnamon - It really brings out the natural sweetness of the apples and give a cozy, apple pie flavor.
  • Baking soda and baking powder - Both help the cake rise for a soft, moist texture.                                            
  • Oil - I use light vegetable oil, instead of butter.                                                       
  • Salt - A little bit enhances all the flavors.

How to make your own oat flour

Making oat flour is so easy! Just put the old-fashioned oats in a food processor and blend on high speed until the oats become powdery. That's it! And it's cheaper than buying store-bought oat flour.

  • Sugar - I use regular granulated sugar for this topping.
  • Butter - I always use unsalted butter, but you could use salted butter, too.
  • Cinnamon - It truly elevates each and every bite!

How to make this oatmeal cake with fresh apples

Step-by-step Instructions

Whisking oat flour and old fashioned rolled oats, baking powder, baking soda, ground cinnamon and salt in a metal mixing bowl.

1. In a large mixing bowl, whisk together the all the dry ingredients.

2. In another bowl, whisk together the wet ingredients.

3. Whisk the wet and dry ingredients together.

4. Peel, core, and chop the apples into small, even pieces.

5. Add the chopped apples and fold everything with a silicone spatula until well-combined.

6.Pour the batter into the springform pan.

7. Put the cinnamon, sugar, and melted butter in a small bowl. Stir everything until combined.

8. Sprinkle the cinnamon sugar topping all over the top of the cake. Then bake!

Recipe notes

Storage tips & freezing instructions

You can store the cake at room temperature for up to 2 days, covered in an air-tight container, or in the fridge for up to about 5 days.

This cake freezes well, too! To freeze, wrap individual slices in plastic wrap and place in an airtight container. You can keep it in the freezer for up to about 3 months. Let it thaw at in the refrigerator overnight or warm it slightly in the microwave.

Variations 

This recipe is incredibly versatile, and there are plenty of ways to customize it:

  • Make it crunchier. Fold in ½ cup of chopped walnuts or pecans for extra crunch.
  • Add dried fruit. Raisins and dried cranberries would be delicious with this cake.
  • Make it spicy. If you want a spicier cake, add some ground ginger, a pinch of cardamom or allspice.

Tips for success

  • Chopping apples. Be sure to cut the apples into small, even pieces so that they all bake evenly.
  • Avoid overmixing. Just stir until the ingredients are combined. Overmixing can make the cake dense.
  • Let the cake cool. For best results, let the cake cool for about 30 minutes in the pan before slicing.

Can I make this cake gluten-free?

Absolutely! Just make sure that the oats you use are gluten-free.

What type of apples work best?

I always use sweet apples because I don't like tart ones, like Granny Smith. You can use your favorite apple variety.

Ingredients

For the cake

  • 2 cups oat flour (180g) (see note below to make your own)
  • ½ cup old-fashioned rolled oats (40g)
  • ½ cup granulated sugar (100g)
  • ¼ cup light brown sugar, packed (50g)
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon salt
  • 3 medium apples cored, peeled, and cubed into very small pieces
  • 1 cup buttermilk (250ml) (or make sour milk by mixing 1 tablespoon white vinegar with 1 cup milk and let it sit for a few minutes)
  • ¼ cup light vegetable oil (60ml) (+ some extra to grease the pan)
  • 2 medium eggs at room temperature
  • 1 teaspoon vanilla

For the cinnamon sugar topping

  • ½ tablespoon melted unsalted butter (7.5g)
  • ¼ cup sugar (50g)
  • ½ teaspoon ground cinnamon

Before You Start:

For best results, please read through the full post before beginning the recipe.

Instructions

  • Grease an 8-inch (20cm) springform pan and line the bottom with parchment paper. Set it aside.
  • In a large bowl, whisk together the oat flour, rolled oats, baking powder, baking soda, cinnamon, and salt. Set aside.
    2 cups oat flour (180g) (see note below to make your own), ½ cup old-fashioned rolled oats (40g) , 2 teaspoons baking powder, ½ teaspoon baking soda, 1 ½ teaspoons ground cinnamon, ¼ teaspoon salt
  • In another medium bowl, whisk together the buttermilk (or sour milk), eggs, vanilla, brown sugar, granulated sugar and oil until combined.
    ½ cup granulated sugar (100g) , ¼ cup light brown sugar, packed (50g), 1 cup buttermilk (250ml) , 2 medium eggs, 1 teaspoon vanilla, ¼ cup light vegetable oil (60ml)
  • Pour the wet ingredients into the bowl with the flour mixture and whisk together until well-combined, but don't overmix. It will be thin.
  • Fold in the chopped apples and mix until just combined.
    3 medium apples
  • Pour the batter into the prepared pan and even the surface.
  • Meanwhile, preheat the oven to 350℉ / 180℃. This will give the oats enough time to soak a bit.
  • Make the cinnamon sugar topping: In a small bowl, stir together the sugar, melted butter and cinnamon until well-combined.
    ½ tablespoon melted unsalted butter (7.5g) , ¼ cup sugar (50g) , ½ teaspoon ground cinnamon
  • Sprinkle the cinnamon sugar all over the top of the batter and bake for about 50-60 minutes or until a toothpick inserted in the middle comes out clean.
  • When done, remove the cake from the oven and let it cool in the pan for 30 minutes.
  • Run a knife around the edge of the pan and release the ring.
  • Slice and enjoy!

  • Make your own oat flour. Simply blend old-fashioned oats in a food processor until powdery.
  • Chop apples into small, even pieces to ensure they bake evenly.
  • Avoid overmixing - stir until just combined to keep the cake light and fluffy.
  • Let the cake cool in the pan for 30 minutes before slicing so that the cake doesn't fall apart.
Storage & Freezing Tips
Keep the cake at room temperature for up to 2 days in an airtight container, or refrigerate for up to 5 days.
To freeze, wrap individual slices in plastic wrap, place in an airtight container, and freeze for up to 3 months. Thaw in the refrigerator overnight or warm briefly in the microwave.

Even though I have also included American volume measurements for convenience, I highly recommend using a digital kitchen scale to weigh all ingredients for the most accurate measurements. Digital kitchen scales are more precise than cups, which is so important in baking, and they give the most accurate, consistent results. Happy baking!

    I made this for my mother's 64th birthday yesterday-- so good! It was enjoyed by all, including my gluten-free sister and the rest of our family who normally eats gluten. Very moist and delicious. I used granny Smith apples (my mother's favorite) and added in 1 tsp ground nutmeg. Otherwise followed the recipe exactly. Delicious! Thank you!

      I honestly can’t say for sure, since I haven’t tested this recipe with less sugar or with sugar-free maple syrup. All my testing was done exactly as written, so I don’t know how changing the sugar would affect the flavor or texture.
